Chicken Lollipop,as there names, are finger lollies that are easy to grab and nibble.It is the perfect starter recipe for parties.These are the all-time favourite amongst kids.
Here,I have tried them in a very simple Indian style.Let me share my recipe.
10 Chicken drummettes
1 tsp ginger-garlic paste
1 tsp kashmiri red chilli powder
1 tsp black pepper powder
2 tsp cornstarch
3-4 garlic pods
Oil to fry
Salt to taste
First,brine the chicken overnight.Brine is the way to soak the chicken in salty water.This helps to keep them soft and tender.
Next day,remove the chicken from salty water and add ginger-garlic paste,kashmiri red chilli powder(for natural red colour),black pepper powder and salt.Keep it marinated for 3-4 hours.
Meanwhile,in a jar blend 2-3 dry red chilli,2 garlic pods along with a tomato and grind them to a paste.Add this mixture to the chicken marination.
On medium high,heat oil in a wok.Add few garlic cloves to temper.Take a small plate with cornstarch for outer coating.Take the chicken pieces one by one and coat them in cornstarch and place them in the hot wok.Fry the chicken lollipops from all sides.Once the lollipops are fried,take them out in a tissue to drain excess oil.
Wrap the lollipop heads with aluminium foils and garnish with chopped spring onions and cherry tomatoes.
Serve these hot and crunchy lollipops with your favourite dips.
