Dahi ke kebab is a unique combination of soft and creamy delicacy.It melts in your mouth leaving behind the various flavours. A delicious healthy and protein rich snack item served with green chutneys.This is an all-time favourite snack amongst vegetarians.

4 cups Greek yoghurt
1 tsp chaat masala
1 tsp roasted cumin powder
1/2 tsp lemon juice
1 tsp red chilli powder
1 tsp chopped green chillies
2 tsp chopped coriander leaves
1/2 tsp chopped mint leaves
1/2 tsp grated ginger
1/2 tsp cinnamon powder
3 tsp cornflour for outer coating
2 tsp Butter
Salt to taste
In a cloth,add the yoghurt and hung it for approx 12 hours.I prefer Greek yoghurt over others as it is more thick and less watery.
Once the hung curd is ready,add in the chaat masala,roasted cumin powder,red chilly powder,green chillies,cinnamon powder,grated ginger,coriander leaves,mint leaves,salt and lemon juice.Mix them well with a spoon as it is a bit messy.
Apply butter on both palms and make small roundels and press them slightly to form a flat patty.In a small plate,dust the cornflour.Slowly,take the flat kebab patties and coat them with cornflour.This step is optional.As I have used Greek yoghurt,it is easy to manage the mixture else we would have to add cornflour or gram flour in the mixture to handle.I have coated with cornflour to give a nice texture from outside.Once the flat kebabs are ready,put them in the refrigerator for about half an hour to chill.This will make them a bit firm and easy to handle.
In a non-stick pan(very important),add some butter for shallow frying.Place the kebabs fritters slowly in the pan and let it fry from both ends.As it is yoghurt,we need to handle them very carefully.Once the colour has turned golden from both ends,we remove them.The super soft and creamy dahi kebabs/yoghurt fritters are ready to serve.
Serve hot with your favourite chutneys or dips.
