You must be thinking as what’s all about fusion here.The story is I wanted to have something creamy ,so had an option of cooking Italian, but.at the same time I wanted something tangy.Creamy tangy together.What to do then?There came an idea of doing some fusion.I prepared Mexican salsa chicken in Italian cream cheese sauce.And the taste was fusicious and so so so awesum. I am pretty sure you all are gonna like it too.
Here is my recipe.
Preparation Time:15 minutes
Cooking Time:20 minutes
200 gms Chicken(boneless)
Salt to taste
1 tsp Black pepper powder
1 tsp Rock salt
1 cup penne pasta(optional)
1/2 cup cilantro leaves
1 garlic pod
1 whole jalapeñoo (de seeded)
1/2 tsp sugar
1 tsp lemon juice
Cream cheese sauce
250 gm soft cream cheese (I used Philadelphia)
100 gms butter
1/2 tsp garlic(minced)
3/4 cup milk
Brine the chicken overnight.Brine method makes the chicken very soft and tender.Drain the chicken and marinate it with salt,black pepper powder and rock salt.
Prepare the salsa by grinding together tomatoes,cilantro leaves,chopped onions,lemon juice,garlic pod,sugar,salt and whole jalapeño in a mixer jar.Add this salsa mixture to the marinated chicken.
Heat a pan and add butter to it.Add the chicken along with salsa and cook for 20 minutes.
In another pan,heat in medium and add butter to melt.Add garlic and sautee. Add cream cheese to butter and garlic.Add milk and stir it well.Keep whisking them to avoid lumps.As the cheese already had salt,I didn’t add salt to the sauce.Once the sauce has thicken,whisk and remove from heat
In another vessel,boil the penne pasta.Drain and keep aside.Pasta is optional.Just to make this a heavy meal,I added pasta .It is also the best partner with cream cheese sauce.
Once the chicken is grilled and cooked,place them in a baking tray.Add penne pasta and pour the cream cheese sauce over the chicken in the baking tray.Sprinkle some mozzarella cheese,chopped parsley leaves and freshly crushed black pepper on the top.Bake it for another 10-15 minutes till the cheese has melted.
Remove from the baking tray and serve hot with your favourite drink.
This fusion of Mexican and Italian will leave you drooling for days.
