Looks yummy,isn’t it? Indeed it was. I was thinking of making a snack with a twist, so this came as an output. Baked as a muffin and stuffed potato with Italian seasoning and mozzarella cheese. A very quick and easy snack recipe when you have some special guests at home.
Preparation Time:10 minutes
Cooking Time:25 minutes
7-8 boiled potatoes
1 cup All purpose flour
1 tsp oil
1/4 cup water
1 tsp oregano
1 tsp black pepper powder
1 tsp dry basil
1 tsp rosemary
2 tsp butter
100 gm mozzarella cheese
1/2 cup chopped coriander leaves
Salt to taste
In a bowl,add all purpose flour,oil,salt and water and knead to make a stiff pastry dough.Cover it with a damp cloth.
Boil the potatoes and mash them.Add oregano,salt,black pepper powder,dry basil and rosemary and mix well.
Apply butter generously along the muffin cases.Roll the pastry dough into thin round shapes and place them over the muffin cases.
Apply butter along the rolled pastry dough.Using a spoon,add half of potato stuffing in each pastry puff placed in muffin tray.Add mozzarella cheese cubes in each cups.Now again add the rest of potato fillings over the cheese.Sprinkle some chopped coriander leaves over the top.
Pre heat the oven for 10 minutes at 200°C.Place the muffin tray in the oven and bake for 12-15 minutes at 150°C.
Once its baked,let it cool for 5 minutes before removing from tray else it might crack.
Once its cool,remove the potato muffins and place them in the serving tray.
Serve hot with your favourite dips.
