Chicken Butter Masala /Murg Makhani

A very common Indian recipe found all across the Indian restaurants globally.It is rich,creamy and mild in taste.It can be made with many variations,with or without onions.The tangy tomato base makes it different from all other chicken recipes.This recipe can be paired with anything of your choice.

Ingredients:

For the marination:

500 gms Chicken
1 tsp Turmeric powder
1 tsp Red chilli powder
1 tsp lemon juice
1 tsp cumin powder
1 tbsp yoghurt
1 tsp Kashmiri red chilli powder(optional)
Salt to taste

For the gravy

6-7 Tomatoes
1 tbsp butter
1/2 cup cashews
1 cinnamon stick
3-4 cardamom seeds
1 tsp Turmeric powder
1 tsp Red chilli powder
1 tsp freshly crushed black pepper powder
1 tsp cumin powder
1 tsp coriander powder
1 tbsp ginger garlic paste
1 tbsp Kasoori methi(fenugreek) leaves(dried)
Salt to taste

For garnishing:

1 tbsp Fresh cream
1/4 cup Chopped coriander leaves

In a large bowl,add yoghurt,turmeric powder,red chilli powder,kashmiri red chilli powder,black pepper powder,lemon juice,salt,cumin powder and mix well.Add the chicken and marinate it for 3-4 hours.
In a deep pan,add butter and heat it.Temper piece of cinnamon stick and cardamom seeds.
In a mixer jar,grind the tomatoes and cashews to a fine paste.Add this paste in the pan and fry.
Now add turmeric powder,red chilli powder,cumin powder,coriander powder and cook in a low heat.Add ginger garlic paste and hand crushed kasoori methi dry leaves. Kasoori methi leaves adds extra aroma to the dish.
When the masala/gravy mixture looks bit fried,add the marinated chicken and cook them.Stir them and coat the chicken properly with the gravy mixture.Add salt.
Cover and cook for 15-20 minutes.Keep checking so that the gravy doesn’t stick to the bottom of the pan.Though the chicken would release water but in case it starts to stick,splash some water and cook.When the oil starts to separate and chicken gets tender,the cooking is done.

Transfer to a bowl.Add a spoon of fresh cream and garnish with chopped coriander leaves.

Enjoy with rice,roti or naan.
