This dish has been conceptualised by my husband. Hard to believe but yes its true. He is a very good chef and inspires me with new ideas every day. If you wanna have a fancy dish, this will make you a star. The lasagna stuffed with cheesy spinach:rolled and topped with garlic and tomato pasta sauce and chicken will make you drool. You will be chock-a-block but your palate will say more, more and more.
Preparation Time: 20 minutes
Cooking Time: 30 minutes
200 gm or 4 large boneless chicken thighs
4 lasagna sheets
100 gm baby spinach
100 gm ricotta cheese
50 gm parmesan cheese
100 gm mozzarella cheese
1 tbsp black pepper powder
Salt to taste
1 bottle basil and tomato pasta sauce (ready-to eat)
Boil the lasagna sheets carefully. Add few drops of oil while boiling so that the sheets don’t stick.
Blanche the spinach leaves, strain and keep aside.
In a bowl, add the blanched spinach leaves,ricotta and parmesan cheese and mix. Add a pinch of salt and freshly crushed black pepper powder in this mixture. Place a spoon heap of spinach-cheese mixture over the boiled lasagna sheet. Slowly roll the lasagna as a tube.Roll all the sheets and keep in refrigerator to set(approx half an hour)
Pre heat the oven at 200 °C for 10 minutes. In a baking tray, generously apply some butter and place the chicken pieces. Add salt and freshly crushed black pepper powder over the chicken. Now drizzle half the ready to eat basil and tomato pasta sauce over the chicken pieces. Grate some mozzarella cheese on the top. Grill for 20 minutes turning the chicken from both sides.
Once the chicken gets baked, take them out. Shred the baked chicken pieces.
Cover the large baking tray with aluminium foil. Drizzle some pasta sauce on the base.Place the rolled lasagna on the tomato sauce base.Add the baked chicken pieces over the lasagna and drizzle the rest of pasta sauce. Grate mozzarella cheese and bake for 10 minutes.
The hot, tangy and spicy stuffed rolled lasagna is ready.
It is a complete meal to satisfy your hunger.
