Post the sunflower bread, I received many requests for making a bread with a veg filling. So, I got an opportunity to bake this braided bread with veg stuffing. A much simple and easy to make bread with a mixed filling of cottage cheese (paneer), spinach and cheese. I have added spinach to make it a bit healthy where kids too can easily munch these spinach without any tantrums. Being a mom, you always need to think of some health benefits to add extra points even if it is a junk food.
Preparation Time: 1 hour
Baking Time: 15-20 minutes
Proofing Time: 2 hr (1st proofing + 1/2 hr (2nd proofing)
For the dough
2 cups All purpose flour
½ cup All purpose flour (for dusting)
1 tsp Dry active yeast
1 tbsp Sugar
1 cup lukewarm water
2 tbsp oil
1 tsp Salt
For the stuffing:
1 tbsp oil
1 chopped onion (medium)
1 chopped green chili
Salt to taste
Grated cheese (mozzarella + processed)
1 tsp freshly crushed black pepper
1 tsp red chili flakes
1 cup chopped spinach
1 cup grated cottage cheese (paneer)
Mixed Italian seasoning (oregano, rosemary, basil, thyme)
1 tbsp Milk ( for final wash)

Step by Step process: (to help you understand clearly)
Add All purpose flour, salt and oil in a large bowl.
In a small bowl, add lukewarm water, sugar and dry active yeast and stir. Let it sit for 5-10 minutes till the froth is formed.
Add the yeast mixture to the flour.
Mix them well and knead them. The dough should be sticky.
Dust some flour on the kitchen surface for kneading.
Place the dough and keep kneading for 8-10 minutes.
Using the lower part of your palm (mount of Venus) knead the dough.
Once the dough is kneaded, keep aside in an oiled bowl.
Pour oil all along the sides of the bowl.
Place the dough in the greased bowl and turn it all sides so that it is covered in oil from all sides.
Cover the dough with a cling film to avoid drying and hard crust formation. Let it proof for atleast 2 hours or till it doubles in volume.
In a frying pan, add oil and heat it.
Chop the spinach and onions and grate the paneer (cottage cheese).
Add chopped chilies and onions and fry them.
Add the grated cottage cheese (paneer) and fry again.
Finally, add the chopped spinach and mix well.
Add salt, black pepper and mixed herbs. Remove from heat and let it cool.
After 2 hours, the dough gets double in volume.
Punch in the center to remove all air.
Spread the dough on the surface.
Roll it into a log.
Cut it into 2 halves and use one halve.
Spread it by hands again.
Make cut strip all along the sides.
Place the dough on a parchment paper over a baking tray. Add the stuffing in the center and spread grated cheese all over.
Start to fold from all the sides one by one like a braid.
Cover all the sides.
Apply oil and sprinkle red chili flakes and mixed herbs over the top.
Apply milk wash over the top and sides. This will give a nice color once ready. Place the tray in the pre- heated oven to bake for 15-20 minutes at 160 degree Celsius.
The cheesy vegetable stuffed braided bread is ready. Serve hot with your favourite dips or tomato ketchup.
