Double chocolate cupcakes


This Christmas, my oven was never idle. It was busy fulfilling everyone’s request- be it cupcakes, muffins, cakes or cookies. I got to bake alot of varieties, most of them my favorites. My friends and neighbors bought new requests that would excite me more than their kids. One request was to bake no frost double chocolate cupcakes with Christmas emoticons toppers. Don’t worry, as this was no fuss at all, a simple baking with a little artwork. The best part in all these was my 3 year old toddler drawing and cutting Christmas stencils for me. The recipe is same as my previous recipe Whole wheat banana double chocolate cake,  with an omission of banana.

Baking Time: 12-15 min

1 1/2  cup whole wheat flour or Atta
1 cup powdered sugar
2 eggs
3/4 cup refine oil
1/2 cup butter milk
1 tbsp baking powder
1 tsp baking soda
1 pinch salt
3 tbsp Hershey’s cocoa powder
1/4 cup dark chocolate chips
1 tsp vanilla essence

For the topper designs:

2 cup powdered sugar


Pre-heat the oven at 150 °C for 10 minutes.
In a large bowl, sift whole wheat flour, baking powder, baking soda, salt, cocoa powder and keep aside.
In another bowl, add oil and powdered sugar and whisk. I use an electric whisk to mix. Once they are well combined, add eggs and beat well for a minute.
Now, add vanilla essence and buttermilk and mix with a spatula. Mix using cut and fold method and scrapping all the sides.
Slowly, add the dry ingredients in batch by sifting again.
At last, add the dark chocolate chips and fold the batter. Keep the muffin moulds ready and pour the batter in them. Fill the moulds only till 3/4 th height. Place the moulds in the oven and bake for 12-15 minutes at 150°C. [Note: The baking time may vary with different electric appliances.]

Let them cool properly before making art designs as it will melt the powdered sugar. Till the time, the cupcakes are cooling, draw some of your favorite Christmas designs on a paper and cut them.

Powder the granulated sugar and sieve them twice to ensure there are no bigger chunks.

Once the cupcakes are cooled, place the stencil templates over the cupcakes and dust the powdered sugar over the top. Carefully remove the stencils and you will find lovely topper designs.

You can use various templates varying from emoticons, designs to alphabets to decorate your cupcakes.
