Irish Coffee cupcakes

patrick's day 2017The fun time is back again with St. Patrick’s day.  Staying in Dublin gave me a reason to celebrate this day.  Thousands of people from all over the world gather to attend the St. Patrick’s day parade. There are so many things to do here on this day apart from mesmerizing parade. Supermarkets are filled with colorful cupcakes, chocolates and traditional Irish tea bracks. Like others, I too thought of participating in this memorial day by baking some Irish cupcakes with Shamrock leaf templates. I followed Donal Skehan’s (one of my favourite masterchef) recipe to make these cupcakes.The amazing taste left its imprint on everyone who tasted it.  I too was happy with my first hands on these Irish dessert.

Preparation Time: 20 min

Baking Time: 15 min

Servings: 8-10 cupcakes


For the cupcakes:
1 cup All purpose flour
1 tbsp Baking powder
1 tsp baking soda
1 pinch salt
1/4 cup butter
1/4 cup refine oil
1 tbsp Irish whiskey (I used Jameson)
1 tbsp espresso powder
2 eggs
Less than 1/2 cup milk
Vanilla extract

For the frosting:
1/2 cup unsalted butter
1 1/2 cup icing sugar
1 tbsp whipped cream (i used Avonmore fresh whipped cream)
1 drop green gel colour


Pre heat the oven to 180˚ C for 10 minutes.
In a large bowl, seive all purpose flour, baking powder, baking soda, espresso powder and salt. In another add oil, butter and sugar and whisk (using an electric whisker) till smooth consistency is reached. Donot over beat.
Add the eggs one by one and mix again. In 2 batches, add the dry ingredients and whisk well. Gradually add milk to form a smooth batter. Add vanilla extract and whiskey and mix.
Line the cupcake tray with paper cases. Using a spoon, drop the batter in the paper cases. Tap the tray to release extra air bubbles. Place the tray in the oven to bake for 15 minutes at 150˚ C.
Once the cupcakes are ready, place them on wire rack to cool.

For the frosting:

In a bowl, add butter and sugar and whisk to form a smooth consistency. Using a spatula, fold in whipped cream.
Coat the cupcakes with the frosting. Let them cool in refrigerator for atleast half an hour. Using green gel colour, design Irish shamrocks on each cupcakes and enjoy them.
