Chicken is my all time favorite. Apart from just eating, I also love experimenting with them. Thousands of recipes can be made with these tender flesh. Whenever we go out to try new recipes, my lil baby sticks to white chicken( as she calls). Every time I made, there was something missing, I would fail to get that restaurant touch. But yesterday, I nailed it finally with the exact taste and flavour. The recipe was a hit in my family. My princess told, ” Mumma you cook very nice”. This is the biggest compliment a mother can earn. So, this time I would love to share my recipe with you so that you could experience the same taste and compliment as I did. The recipe is extremely simple. With very less ingredients, we get a flavorful malai chicken. It is creamy, light and tasty. You would never feel bloated. The combination of curd makes it cool and digestive.
Preparation Time: 10 minutes
Marination Time: 4-5 hours
Cooking Time: 20 minutes
500 gm Chicken drumsticks
1 cup Hung curd
10-15 cashew (soaked)
4 green chillies
1/2 cup freshly chopped coriander leaves
1 tbsp crushed Kasuri methi leaves.
1 tsp black pepper crushed
1 tbsp ginger garlic paste
1 tbsp Fresh Cream
1 Tbsp Butter
Mustard Oil 1 tbsp
Salt to taste
Wash the drumsticks thoroughly. Using a sharp knife, make slits all along the legs. Using a kitchen towl, dry the drumsticks to remove the wetness.
In a mixer grinder, grind cashews and green chilli and make a paste. Add green chillies as per your taste.
In a bowl, add hung curd, cream, cashew chilli paste, lemon juice, ginger garlic paste, crushed black pepper powder, garam masala powder and salt. Mix them properly.
Add the chicken legs and coat them well with the marination. Donot add the oil now as the marination process slows down on adding oil.
Keep in the refrigerator for 3-4 hours for marination. You can keep it for minimum 1 hour also.
Add mustard oil, coriander leaves and kasuri methi and mix. I kept this again for marination for 3 hours as I had to grill them for dinner. More the marination time, better the taste.
Heat a grill pan and add butter. You can use a microwave or an oven also.
Add the chicken legs and grill. After 10 minutes, turn the legs to cook from both sides. In pan, it took 20 min for me to cook on low.
The aroma of mustard oil, kasuri methi and garam masala could be smelled from outside the house.
The malai chicken turned out to be extremely soft, tender and tasty.
The best part of these creamy drumsticks was they were light, tasty and with no spices. You can easily cook them with no oil. Curd is extremely good for digestion. So you would never find yourself bloated.
